I have always been a fan of chili, and when I started doing Whole30 I was quickly disappointed that I would need to cut chili from my diet (you cannot have legumes of any kind on Whole30). Chili as I have known it was always meat, beans, tomatoes with a few spices thrown in. I decided I needed to create a recipe that still tasted like chili, but was Whole30-friendly, with maybe a few more veggies thrown in. I also am a huge fan of the Instant Pot, so I wanted to make a chili recipe to quickly make in the IP. Brought to you by crunchofthemom.com, here is Whole30 Instant Pot Chili!

Whole30 Instant Pot Chili
Whole30 Instant Pot Chili
A Whole30 compliant , non-spicy beef chili for the Instant Pot.
Ingredients
- 2 tbsp coconut oil
- 1 tbsp extra virgin olive oil
- 2 lbs grass fed ground beef
- 1 tsp salt
- 1 tsp italian seasoning
- 3 14oz cans diced fire roasted tomatoes
- 3 whole bell peppers, chopped I use yellow, orange, and red
- 1 bunch green onions
- 3 cups cauliflower food processed
Instructions

Press the “saute” button and add oil, beef, salt, and seasoning. Cook 6-8 mins, breaking up the meet and stirring often.

Add in tomatoes, peppers, green onion and stir well.

Place lid on and close valve. Press “manual” button and set time for 10 minutes.

After 10 minutes is up, hit “cancel” and release the pressure of your Instant Pot. I put my Instant Pot on my stove under the fan, so I can release the steam that way instead of in the direction of my wooden cupboards.

Put cauliflower in a food processor or hand chop finely. Saute cauliflower on stove in 1 T olive oil until it is slightly softened and appears like rice consistency.

Add cauliflower to chili to combine, or serve chili overtop cauliflower. Both ways are delish!
Time to eat!
When you’re doing Whole30, it’s nice to have those “comfort foods” that you crave. For me, chili is one of those. I’m glad that I can still have chili in a slightly different form, knowing it’s Whole30 compliant, low carb, gluten free, dairy free, and super packed with veggies.
